If you want to run a rooftop AC you need to use a 3600 watt generator or a 2200 watt Honda Generator ($2000)with a soft start compositor ($500) it set up a small 5000 BTU window AC unit that has a much smaller electrical demand. Plus you can not idle a MB BlueTec diesel without a fast idle kit unless you want to replace your $20,000 engine. You need fast charging LiFePo to even consider it. You will burn up your cab battery and pulse alternator and quickly discharge the 100 AH 12 volt lead acid battery with high resistance that can't charge that fast. One your altinator does not put out a constant voltage so you need both a 2500 watt to 3000 watt inverter and a battery bank to match that. You can not run a 110 rooftop AC unit on your primary 200 amp alternator. This was not done on a shoe string budget. I can run my 13500 BTU rooftop AC unit on my my house battery but I have a 8KWH 24 volt system (2 Tesla 444 modules) with 3000 watt inverters and solar.
